Taco, Taco Land, I want to be in Taco Land

Sing that to the tune of "Macho Man." Lynette brought back a bunch of tortillas from a "zero-waste" party a week ago, so we decided to have a Mexican dinner. The ground beef was marinated in port, honey, garlic, salt, olive oil and parsley, then fried with chopped onions, cilantro and tomatoes (with the tomato juice adding moisture). The salsa was simply chopped onions, chopped tomatoes, cilantro and lime juice. The rice was cooked with saffron and a pinch of salt.

But the star of the night was the avocado that became the guacamole (just the 'cado with lime juice and salt). It was the most perfect avocado EVER. It was perfectly ripe with no brown spots anywhere, just emerald green and that pale greenish yellow. And it came off the skin so easily when it was scooped with a spoon, the skin was so clean it was like Kenneth Cole wallet. Or something like that. You get the picture.

We were very full after the meal, and the leftovers are going to be lunch tomorrow.
