
We went on a chocolate factory tour near the city. The company is Taza Chocolate, and they specialize in "stone-ground" chocolate. Basically they get their chocolate liqueur using a stone mill, and they skip a processing step called conching to "preserve the flavor" of the bean, according to our guide. Views are split on whether that actually makes the chocolate better, but it certainly is different. The chocolate tastes grainy, like there are little bits in it. We were just there for the free samples. Juni slept through most of it in the baby carrier.
