Green eggs and butterflies



Our friend Xiaojuan has been taking cooking lessons, and she was kind enough to share her new skillz with us. One favorite with us is her egg fritatta, which is caramelized onions baked in egg. The egg looks green because she used red onions (the red pigment is cooked off, leaving the blue pigment behind, which combines with the yellow egg to become green).

The same meal, we tried to make our own flatbread using a quick pizza crust recipe and adding sesame seeds and a bit of butter/sugar glazing. The bread ended up tasting like the butterfly fritters from home. Yes, butterfly fritters. That's the government-sanctioned name for those snacks.
