Chicken rice balls

We went camping over the weekend, headed up to Ethan Pond in New Hampshire's White Mountains with a bunch of friends. The weather was great when we started out, but halfway through lunch it began to rain and the rain only stopped at dinner and a bit of breakfast the next day. A bit of a bummer, but Kenneth likes to say that the weather's part of the package when you're going outdoors. Got to take the bad and the good. But we were pretty fortunate. We got to the campsite when there were still lots of room and got to pick the best spots, and we left the next day just before the rain really began to pour.

For lunch on the first day, we made some chicken rice balls at home the night before. Just like making chicken rice, except that we placed the parts on a Glad wrap and shaped little balls. Made four altogether, although we ran out of chicken after ball #3, so the last one only had rice and cucumber. Our friend Idina thought it was odd to smell chicken rice in a New Hampshire forest.

making chicken rice ball for picninc is a great idea. At home dad always remind me to remove any sliced cucumber in the chicken if we are not eating it immediately as it can cause the chicken (food) to turn bad faster. Perhaps in colder countries it's safer.
