Give me summer food, she said
It was a really warm Sunday and Lynette wanted dinner to be summery. That means none of that hot soup stuff that makes you sweaty and worn out at the end of the meal. So we had this simple meal, which turned out pretty nice.The starch came from rosti, which faithful followers of this blog might notice has been mentioned a few times. It's just pan fried shredded potatoes with a bit of salt and pepper and some capers to add depth to the flavor. The tilapia was rubbed with salt and cayenne powder and then seared on both sides and paired with some oranges. The orange slices you see in the photo happen to be blood oranges, which is why they have that scary color. Scary Spice? The tilapia sits atop a bed of blanched string beans.
The nice thing about the meal was that it tastes fine at just slightly above room temperature, so it doesn't make you sweat. And the plain veggie and oranges were really refreshing on the palate. Stomachs happy.
